Potato And Onion Soup

Serves: 4

Ingredients

450g potatoes, diced
1 carrot, diced
2 litres water
450g onions
3 tbsp olive oil
120 ml dry white wine
fresh ground black pepper
salt

Instructions:

  1. Place the Potato and Carrot in a pan, poor in water and heat to a simmer
  2. Once Simmering leave on stove for 1 hour, checking and stirring occasionally
  3. Blend the potato, carrot and water and return to the pan
  4. Heat the olive oil and a frying pan and add the onions and around 150 ml of water and cook for 10 minutes
  5. Add the wine and cook until the liquid is almost gone
  6. Add to the soup and blend again
  7. Season with salt and pepper to taste
  8. Re-heat and serve
