Ingredients:
4 Chicken Breasts Sliced
1 Green Pepper Sliced
1 Red Pepper Sliced
1 Yellow Pepper Sliced
2 Carrots Sliced
1 Red Onion Sliced
2 Sticks of Celery Sliced
Handful or Mange Tout
4-5 Baby sweetcorn cut in half length wise
Soya Sauce
2 Eggs
Pepper
Cup full or Rice
Instructions:
- Boil rice according to the instructions on the pack
- Poor 1 table spoon of cooking oil into a frying pan or Wok and heat
- Fry the carrots, onions, celery, mange tout, and bay sweetcorn
- Add the chicken breasts (sliced) to the veg and fry for 8-10 minutes or until the chicken is cooked through.
- Drain rice and place rice in with the veg
- Poor 2 table spoons of soya sauce into the rice and stir
- Crack the two eggs into the pan and keep mixing until the egg is cooked.
- Add pepper to taste
