Chicken Stir-fry

Cooking time: 15 Minutes

Ingredients:

4 Chicken Breasts Sliced
1 Green Pepper Sliced
1 Red Pepper Sliced
1 Yellow Pepper Sliced
2 Carrots Sliced
1 Red Onion Sliced
2 Sticks of Celery Sliced
Handful or Mange Tout
4-5 Baby sweetcorn cut in half length wise
Soya Sauce
2 Eggs
Pepper
Cup full or Rice
Instructions:

  1. Boil rice according to the instructions on the pack
  2. Poor 1 table spoon of cooking oil into a frying pan or Wok and heat
  3. Fry the carrots, onions, celery, mange tout, and bay sweetcorn
  4. Add the chicken breasts (sliced) to the veg and fry for 8-10 minutes or until the chicken is cooked through.
  5. Drain rice and place rice in with the veg
  6. Poor 2 table spoons of soya sauce into the rice and stir
  7. Crack the two eggs into the pan and keep mixing until the egg is cooked.
  8. Add pepper to taste
